Ingredients:
5 1/2 cups all-purpose flour1 1/2 teaspoons lemon zest1 1/2 cups white sugar1 1/2 teaspoons baking powder1 1/2 cups shortening3 eggs3 tablespoons milk3 tablespoons caraway seed
Instructions:
In a large bowl, combine the flour, sugar, and baking powder. Cut in the shortening until the mixture resembles coarse crumbs.In another bowl, beat the eggs, milk, seeds and lemon zest until blended well. Add to the dry ingredients and blend until smooth. If the dough seems a bit stiff, add extra milk, one tablespoon at a time.On a floured surface, roll dough out 1/4 inch thick and cut using a 2 inch round cutter. Place cookies 2 inches apart on greased cookie sheet.Bake in preheated 375 degree F (190 degrees C) oven for 7 to 10 minutes until edges are lightly browned. Cool on wire rack.
