Black Bean Soup II recipe


    4 servings

Ingredients:

  • 2 (15 ounce) cans black beans, rinsed and drained
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1 green bell pepper, chopped
  • 7 cups water
  • 1 teaspoon olive oil
  • salt to taste
  • ground black pepper to taste
  • 1/8 teaspoon ground cumin

    Instructions:

  • In a Dutch Oven saute onion, garlic and green pepper in oil over medium heat till tender.
  • Add beans and water and season with salt, pepper and cumin to your desired taste.
  • Mix well and simmer for 25 minutes.
  • Pour soup into blender and puree.
  • Once soup is to your desired consistency return to Dutch Oven and return to medium-low heat.
  • Pour a few drops of olive oil in bowl for added flavor and dish up soup.
