Black Beans and Rice recipe |

Ingredients:
1 teaspoon olive oil1 onion, chopped2 cloves garlic, minced3/4 cup uncooked white rice1 1/2 cups low sodium, low fat vegetable broth1 teaspoon ground cumin1/4 teaspoon cayenne pepper3 1/2 cups canned black beans, drained
Instructions:
In a stockpot over medium-high heat, heat the oil.Add the onion and garlic and saute for 4 minutes.Add the rice and saute for 2 minutes.Add the vegetable broth, bring to a boil, cover and lower the heat and cook for 20 minutes.Add the spices and black beans.
