Bread Salad with Tofu recipe |

Ingredients:
1 cup olive oil2 tablespoons balsamic vinegar1 cup tomato juicedried basil to tastesalt and pepper to taste1 (1 pound) loaf day-old bread, cut into 1 inch cubes1 (7.5 ounce) package smoked tofu, diced2 large tomatoes, diced2 cups chopped fresh spinach
Instructions:
In a large bowl, whisk together the olive oil, balsamic vinegar, tomato juice, basil, salt, and pepper.Toss with the cubed bread, tofu, tomatoes, and spinach just before serving.
