Ingredients:
2 cups long grain rice, rinsed and drained1/4 cup diced onion1 1/2 cups coconut milk3/4 cup water2 slices fresh ginger root2 teaspoons curry powder1/2 teaspoon salt
Instructions:
In a medium saucepan, combine rice, onion, coconut milk, water, ginger, curry powder, and salt.Cover, and bring to a boil.Reduce heat, and simmer for 20 to 30 minutes, or until done.
