Eggless Sweet Potato Casserole recipe


    6 servings

Ingredients:

  • 6 sweet potato -- cooked, peeled and mashed
  • 1/4 cup evaporated milk
  • 1/4 cup orange juice
  • 1 teaspoon vanilla extract
  • 1/2 cup white sugar
  • 1/2 teaspoon salt
  • 3 tablespoons butter, melted
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  •  
  • 1/3 cup butter, melted
  • 3/4 cup packed brown sugar
  • 1/2 cup all-purpose flour
  • 3/4 cup chopped pecans

    Instructions:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease one 2 quart casserole dish and set aside.
  • Blend together the sweet potatoes, evaporated milk, orange juice, vanilla, sugar, salt, 3 tablespoons butter, nutmeg and cinnamon.
  • Pour into prepared casserole dish.
  • Prepare the topping by mixing together the 1/3 cup butter, brown sugar, flour and pecans.
  • Sprinkle over casserole and bake for 45 minutes or until hot.
