Fantastic Green Rice Dish recipe |

Ingredients:
1 cup uncooked white rice1/2 cup shredded Cheddar cheese1 small onion, grated2 eggs, beaten1/4 cup butter, softened1 cup fresh parsley1 1/2 cups milk
Instructions:
Preheat oven to 250 degrees F (120 degrees C).In a saucepan bring 2 cups of water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.To the cooked rice add cheese, onion, eggs and butter. Mix well and gently stir in parsley and milk. Transfer to a 2 quart casserole dish.Bake in preheated oven for 1 1/2 hours.
