Fantastic Green Rice Dish recipe


    4 servings

Ingredients:

  • 1 cup uncooked white rice
  • 1/2 cup shredded Cheddar cheese
  • 1 small onion, grated
  • 2 eggs, beaten
  • 1/4 cup butter, softened
  • 1 cup fresh parsley
  • 1 1/2 cups milk

    Instructions:

  • Preheat oven to 250 degrees F (120 degrees C).
  • In a saucepan bring 2 cups of water to a boil.
  • Add rice and stir.
  • Reduce heat, cover and simmer for 20 minutes.
  • To the cooked rice add cheese, onion, eggs and butter.
  • Mix well and gently stir in parsley and milk.
  • Transfer to a 2 quart casserole dish.
  • Bake in preheated oven for 1 1/2 hours.
