2 cups sifted all-purpose flour2 teaspoons baking powder1 1/2 teaspoons baking soda1 1/2 teaspoons salt2 teaspoons ground cinnamon2 cups white sugar1 1/2 cups vegetable oil4 eggs2 (4.5 ounce) jars carrot baby food1/2 cup crushed pineapple, drained1/2 cup chopped walnuts1/2 cup flaked coconut
Instructions:
Preheat oven to 350 degrees F (175 degrees C).Grease and flour one 9x13 inch cake pan.Mix together the flour, baking powder, baking soda, salt, ground cinnamon.Stir in the white sugar.Add the oil and the eggs and mix well.Stir in the carrots, pineapple, chopped nuts, and the coconut.Pour batter into the prepared pan.Bake at 350 degrees F (175 degrees C) for 40 minutes or until a toothpick inserted in the center comes out clean.
