Green Abundance recipe


    6 servings

Ingredients:

  • 1 tablespoon vegetable oil
  • 1 pound cubed lean pork meat
  • 3 cups shredded cabbage
  • 4 medium potatoes - peeled and cubed
  • 1 green bell pepper, seeded and chopped
  • 2 cups broccoli florets
  • 12 Brussels sprouts
  • 3 green onions, chopped
  • 4 leeks, chopped
  • 3 cloves garlic, minced
  • 1/4 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 cup red wine
  • 2 quarts water
  • salt and pepper to taste

    Instructions:

  • Heat oil in a large soup pot over medium-high heat.
  • Add cubed pork, and fry until browned on all sides.
  • Add cabbage, potatoes, green pepper, broccoli, Brussels sprouts, green onions, leeks and garlic.
  • Season with thyme, basil and oregano.
  • Pour in the red wine and water.
  • Cover, and simmer over low heat for 2 hours, until everything is tender.
  • Season to taste with salt and pepper before serving.
