Hopping John recipe

Ingredients:

  • 2 cups dry black eye peas
  • water
  • 1 ham hock, meat cut from bone
  • 2 cups chopped onions
  • 1 teaspoon red pepper flakes
  • 2 cups long grain rice, uncooked
  • 1/2 cup CLAUSSEN Pickle Relish
  • 5 KRAFT Singles

    Instructions:

  • Place peas in large pot.
  • Add enough water to cover peas by 2 inches.
  • Bring to boil; boil 2 minutes.
  • Remove from heat.
  • Let stand 1 hour.
  • Add ham meat and bone, onions and pepper flakes to peas.
  • Add enough water to cover peas and meat by 2 inches; cover.
  • Cook on medium heat about 30 minutes or until peas are tender.
  • Add additional water if necessary to keep the peas juicy.
  • Stir in rice; let simmer 20 minutes or until rice is tender.
  • Stir in the pickle relish and Singles.
