Jam Cake recipe

Ingredients:

  • 1 cup butter
  • 2 cups white sugar
  • 3 eggs
  • 1 teaspoon baking soda
  • 3 cups all-purpose flour
  • 1 cup buttermilk
  • 1 cup blackberry preserves
  • 1 cup chopped pecans
  • 1 cup shredded coconut
  • 1 cup raisins

    Instructions:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Lightly grease one 10 inch tube pan and set aside.
  • Cream together the butter and sugar.
  • Add eggs separately, beating well after each.
  • Sift together soda and flour; add alternately with buttermilk to creamed mixture.
  • Mix well.
  • Add jam, pecans, coconut and raisins.
  • Mix well and pour into prepared pan.
  • Bake for one hour or until toothpick inserted in center comes out clean.
