Kiwifruit Rice Salad recipe |

Ingredients:
2 1/4 cups water1 cup brown rice2 tablespoons butter1/4 cup chopped onion1/2 cup chopped celery1/2 teaspoon curry powder1 cup plain yogurt1 teaspoon fresh lime juice1/2 teaspoon lime zest1 teaspoon white sugar1 kiwi, peeled and chopped4 ounces cooked ham, julienned2 ounces Swiss cheese, cubed1/3 cup cashews1/2 cup fresh mushrooms, coarsely chopped2 kiwis, peeled and sliced
Instructions:
Combine water and rice in a medium saucepan.Bring to a boil.Cover, reduce heat, and simmer for 45 to 50 minutes.Cool.Heat butter in a skillet over medium heat.Cook onion and celery in butter until tender, stirring frequently.Season with curry powder, and continue cooking for one minute.In a large bowl, mix together yogurt, lime juice, lime zest, and sugar.Stir in rice, onion and celery mixture, chopped kiwi, ham, cheese, nuts, and mushrooms. Arrange sliced kiwi over salad.
