Lima Beans and Ham recipe


    8 servings

Ingredients:

  • 3 cups fresh lima beans
  • 3 cups water
  • 2 potatoes, diced
  • 1 (15.25 ounce) can whole kernel corn
  • 1 large tomato, diced
  • 1/2 medium onion, diced
  • 1 stalk celery, diced
  • 2 tablespoons cornstarch
  • 1/4 cup milk
  • 6 ounces cooked ham, diced
  • 1 pinch dried parsley
  • salt and pepper to taste

    Instructions:

  • Place the lima beans in a large pot, and pour in the water.
  • Bring to a boil, reduce heat to medium, and cook 15 minutes.
  • Mix the potatoes, corn, tomato, onion, and celery into the pot, and continue cooking 15 minutes.
  • In a small bowl, dissolve the cornstarch in the milk.
  • Stir into the pot, and mix in the ham.
  • Continue cooking until heated through.
  • Season with parsley, salt, and pepper to serve.
