Mango Custard Pie recipe

Ingredients:

  • 1 (9 inch) pie crust, baked
  • 2 cups pureed mango
  • 1 tablespoon fresh lime juice
  • 1/4 cup evaporated milk
  • 1/4 cup sifted all-purpose flour
  • 3/4 cup white sugar
  • 1/2 teaspoon ground cinnamon
  • 2 eggs, beaten

    Instructions:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl mix together mango puree, lime juice, and evaporated milk.
  • In a separate bowl thoroughly mix flour, sugar, and cinnamon.
  • Gently stir flour mixture into mango mixture.
  • Whisk until smooth, then mix in beaten eggs.
  • Pour mixture into pastry shell.
  • Bake in preheated oven for 30 minutes.
  • Chill before serving.
