Pasta with Spinach recipe


    4 servings

Ingredients:

  • 1 (8 ounce) package fettuccini, uncooked
  • 1 (16 ounce) package frozen chopped spinach
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 cup shredded Parmesan cheese
  • 2 tablespoons pine nuts, toasted

    Instructions:

  • COOK fettuccine according to package directions; drain and set aside.
  • COOK spinach according to package directions; drain and set aside.
  • Saute garlic in olive oil in a large skillet until tender but not brown.
  • Stir in cooked spinach, salt, and pepper; cook until thoroughly heated.
  • Toss together spinach mixture, fettuccine, Parmesan cheese, and pine nuts in a large serving bowl.
  • Serve immediately.
