Peach Pecan Sweet Potatoes recipe |

Ingredients:
6 sweet potatoes, peeled and sliced1 (16 ounce) package frozen peach slices1/4 cup butter1 tablespoon lemon juice1/2 cup brown sugar1/2 teaspoon ground ginger1/4 cup coffee flavored liqueur1/2 cup chopped pecans
Instructions:
Preheat oven to 350 degrees F (175 degrees C).Lightly grease a medium baking dish.Arrange 1/2 the sweet potatoes in the bottom of the prepared baking dish.Layer with 1/2 the peaches, and dot with 1/2 the butter.Repeat layering with remaining sweet potatoes and peach slices.Sprinkle evenly with lemon juice, brown sugar, and ginger.Dot with remaining butter, and sprinkle with coffee flavored liqueur.Cover, and bake 1 hour in the preheated oven, or until sweet potatoes are tender.Remove cover, sprinkle with pecans, and continue baking 10 to 15 minutes before serving warm.
