Ingredients:
1 cup butter, softened1 cup white sugar1 cup packed brown sugar2 eggs1 cup peanut butter2 cups all-purpose flour2 teaspoons baking soda1/4 teaspoon salt1 cup flaked coconut
Instructions:
Preheat oven to 375 degrees F (190 degrees C).In a medium bowl, cream together the butter, white sugar, and brown sugar until light and fluffy.Beat in the eggs one at a time, then mix in the peanut butter.Combine the flour, baking soda, and salt; blend in to form a soft dough.Mix in coconut.Drop dough by teaspoonfuls onto ungreased cookie sheets.Flatten each cookie using the tines of a fork.Bake for 12 to 15 minutes in the preheated oven.Cool on wire racks.
