Poor Man's Fried Rice recipe


    4 servings

Ingredients:

  • 1 1/2 cups uncooked instant rice
  • 1 tablespoon sesame oil
  • soy sauce to taste
  • 2 eggs, beaten
  • 1 teaspoon finely chopped fresh ginger root
  • 1/4 cup finely chopped green onions

    Instructions:

  • Bring water to a boil in a medium saucepan.
  • Stir in rice and cover.
  • Remove from heat and let stand 5 minutes.
  • Fluff with a fork and drain any excess water.
  • Heat oil in a large skillet over medium heat.
  • Stir in rice and soy sauce; heat briefly then transfer rice to a bowl.
  • Scramble the eggs in the same skillet, then stir in rice.
  • Stir in ginger and green onions; heat through and serve.
