Portuguese Bean Soup I recipe |

Ingredients:
1/2 pound chorizo sausage, chopped1/4 cup olive oil2 carrots, chopped1 cup chopped onion5 stalks celery, chopped5 tomatoes, chopped3 small potatoes, peeled and chopped3 quarts chicken broth1 1/2 tablespoons cayenne pepper1 (15 ounce) can kidney beans, drained1/2 cup tomato paste salt and pepper to taste
Instructions:
Place sausage in a large, deep skillet.Cook over medium high heat until evenly brown.Drain, crumble and set aside.In a stockpot over medium-high heat, heat oil and saute carrots, onion and celery.Add tomatoes, potatoes, kidney beans and chicken broth.Bring to a boil and stir in cayenne pepper and tomato paste.Reduce heat and simmer for 20 minutes.Add sausage and season with salt and pepper to taste.Serve hot.
