Post Holiday Salad recipe

Ingredients:

  • 2 cups diced cooked turkey
  • 1 cup pineapple chunks, drained
  • 1 cup diced celery
  • 1/2 cup sliced green onion
  • 1/4 cup dry-roasted peanuts
  • 1 cup seedless grapes, halved
  • 2/3 cup mayonnaise
  • 2 tablespoons finely chopped chutney
  • 1 tablespoon lime juice
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon salt
  • lettuce leaves

    Instructions:

  • In a bowl, mix the turkey, pineapple, celery, onion, peanuts, and grapes.
  • In a separate bowl, mix the mayonnaise, chutney, lime juice, curry powder, and salt.
  • Gently toss the mayonnaise mixture with the turkey mixture to coat.
  • Refrigerate 20 minutes or until chilled, and serve on plates lined with lettuce.
