Ingredients:
2 cups diced cooked turkey1 cup pineapple chunks, drained1 cup diced celery1/2 cup sliced green onion1/4 cup dry-roasted peanuts1 cup seedless grapes, halved2/3 cup mayonnaise2 tablespoons finely chopped chutney1 tablespoon lime juice1/2 teaspoon curry powder1/4 teaspoon saltlettuce leaves
Instructions:
In a bowl, mix the turkey, pineapple, celery, onion, peanuts, and grapes.In a separate bowl, mix the mayonnaise, chutney, lime juice, curry powder, and salt.Gently toss the mayonnaise mixture with the turkey mixture to coat.Refrigerate 20 minutes or until chilled, and serve on plates lined with lettuce.
