Rick's Caribbean Ropa Vieja recipe


    8 servings

Ingredients:

  • 1/4 cup butter
  • 1 red onion, chopped
  • 8 ounces fresh mushrooms, chopped
  • 2 pounds flank steak
  • 1 1/2 cups red wine
  • 1 (13.5 ounce) can coconut milk
  • 1/2 cup sour cream
  • 8 ounces flaked coconut (optional)
  • 1/4 cup brown sugar
  • 1 tablespoon ground allspice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

    Instructions:

  • Melt the butter in a skillet over medium heat, and cook the onion and mushrooms until lighlty browned.
  • Place flank steak in the skillet, and brown on all sides.
  • Pour in the wine.
  • Reduce heat to low, and continue cooking 30 minutes, or until meat is very tender.
  • Remove meat, shred, and return to skillet.
  • Pour coconut milk into the skillet.
  • Mix in sour cream, coconut flakes, brown sugar, allspice, salt, and pepper.
  • Continue cooking 10 minutes, or until heated through.
