Ingredients:
8 ounces dry spinach noodles1/3 cup olive oil3 tablespoons lemon juice1 clove garlic, minced1/2 teaspoon green hot pepper sauce1/2 teaspoon anise seed1/2 teaspoon salt1 cup ricotta cheese2 tomatoes, coarsely chopped1/2 cup sliced black olives
Instructions:
Bring a large pot of lightly salted water to a boil.Add pasta and cook for 8 to 10 minutes or until al dente; drain.In a large bowl, whisk together olive oil, lemon juice, garlic, hot pepper sauce, anise seed and salt.Mix in cooked pasta, ricotta cheese, tomatoes, and olives.Cover, and chill.
