Shortcut Minestrone Soup recipe |

Ingredients:
2 quarts water2 (14.5 ounce) cans diced tomatoes, undrained1 (10 ounce) package frozen chopped spinach1 (10 ounce) package frozen BOCA Meatless Italian Sausage, cut into 1/2-inch slices2 medium carrots, sliced1 medium onion, chopped1 cup bow tie pasta, uncookedGrated Parmesan cheese (optional)
Instructions:
PLACE all ingredients except Parmesan cheese into stock pot or large Dutch oven.BRING to a boil on medium-high heat, stirring occasionally.Reduce heat to medium-low; simmer 15 minutes or until carrots are tender, stirring occasionally.SERVE sprinkled with Parmesan cheese, if desired.
