Simple Sausage Potato Pancakes recipe |

Ingredients:
2 large red potatoes, peeled, quartered1/2 small onion1/4 cup cholesterol-free egg product 1 tablespoon flour1/2 teaspoon salt2 frozen BOCA Meatless Breakfast Patties, quartered2 teaspoons vegetable oil, divided
Instructions:
PLACE potatoes, onion, egg product, flour and salt into blender container; cover. Blend until smooth.Add breakfast patty pieces; cover.Blend an additional 5 to 10 seconds.HEAT 1 tsp.of the oil in nonstick skillet on medium heat.Add potato mixture to hot skillet to form 8 pancakes, using 1/4 cup of the potato mixture for each pancake.COOK 3 minutes on each side or until golden brown on both sides, adding remaining oil as necessary.
