Ingredients:
1/2 cup stick butter or margarine, softened1 cup Equal® Spoonful*1 egg1 teaspoon vanilla4 cups high protein crisp rice and wheat cereal, crushed, divided1 cup all-purpose flour1 teaspoon baking powder1/4 teaspoon salt1/2 cup mini semi-sweet chocolate chips
Instructions:
Beat butter and Equal® on medium speed of electric mixer until light and fluffy.Beat in egg and vanilla until well combined.Stir in combined 1 cup crushed cereal, flour, baking powder and salt until well blended.Stir in chocolate chips.Shape dough into balls using rounded measuring teaspoons.Roll in remaining 1/2 cup crushed cereal.Place on ungreased baking sheet.Bake in preheated 375 degrees F oven 8 to 10 minutes.Remove from baking sheet and cool completely on wire rack.
