Ingredients:
1/4 cup packed brown sugar1/4 cup white sugar3 eggs1/2 teaspoon vanilla extract2 cups all-purpose flour1/2 teaspoon baking powder1/2 teaspoon baking soda1 1/2 cups rolled oats1/2 cup flaked coconut1/2 cup butter
Instructions:
Preheat oven to 350 degrees F (175 degrees C).In a medium bowl, cream together the white sugar , brown sugar and butter.Stir in the eggs, one at a time, and vanilla.Combine the flour, rolled oats, baking powder and baking soda, add to the sugar mixture and mix well with your hands to form a dough.Mix in the coconut last.Drop cookies by teaspoons onto an unprepared cookie sheet and bake for 8 to 10 minutes, in the preheated oven.Cookies will turn golden brown.Remove to cool on baking racks.
