Susan's Cookies recipe

Ingredients:

  •  
  • 1/4 cup packed brown sugar
  • 1/4 cup white sugar
  • 3 eggs
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 cups rolled oats
  • 1/2 cup flaked coconut
  • 1/2 cup butter

    Instructions:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, cream together the white sugar , brown sugar and butter.
  • Stir in the eggs, one at a time, and vanilla.
  • Combine the flour, rolled oats, baking powder and baking soda, add to the sugar mixture and mix well with your hands to form a dough.
  • Mix in the coconut last.
  • Drop cookies by teaspoons onto an unprepared cookie sheet and bake for 8 to 10 minutes, in the preheated oven.
  • Cookies will turn golden brown.
  • Remove to cool on baking racks.
