1 1/2 cups all-purpose flour4 tablespoons white sugar1/4 teaspoon salt1/4 cup butter1 egg1 teaspoon vanilla extract4 eggs, beaten1 teaspoon vanilla extract1 1/2 (15 ounce) containers ricotta cheese1 tablespoon all-purpose flour1 cup white sugar2 tablespoons confectioners' sugar
Instructions:
For Crust: In a large bowl, sift together 1 1/2 cups flour, 4 tablespoons sugar and 1/4 teaspoon salt. Cut in butter, 1 egg and 1 teaspoon vanilla. Mix until dough forms. Roll into 9 inch crust. Place dough in greased pie plate. Chill for 1 hour.Preheat oven to 350 degrees F (175 degrees C).In a large bowl, beat 4 eggs. Add 1 teaspoon vanilla, 1 1/2 pounds ricotta cheese, 2 tablespoons flour, 1 cup white sugar and 2 tablespoons confectioners' sugar.Beat until smooth.Pour into crust and bake in preheated oven for 45 minutes or until lightly browned and firm.
