Sweet Potato Pie VI recipe

Ingredients:

  • 1 (9 inch) pie shell
  • 1 (16 ounce) can mashed sweet potatoes
  • 3/4 cup milk
  • 3/4 cup packed brown sugar
  • 1/2 cup light corn syrup
  • 2 eggs
  • 1 tablespoon butter, melted
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 pinch ground nutmeg

    Instructions:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a large mixing bowl combine sweet potatoes, milk, sugar, corn syrup, eggs, butter or margarine, salt, cinnamon, and nutmeg.
  • Blend with mixer or hand-held beaters until smooth.
  • Pour mixture into pie shell.
  • Place in preheated oven and bake for 10 minutes.
  • Reduce oven temperature to 350 degrees F (175 degrees C) and bake for an additional 35 minutes, or until knife inserted in center comes out clean.
  • May have to shield crust edges with foil for last 20 minutes to prevent burning.
