Ingredients:
36 ladyfingers9 ounces mascarpone cheese2 egg yolks2 egg whites4 tablespoons white sugar3 tablespoons rum4 tablespoons milk1 cup strong brewed coffee1/8 teaspoon unsweetened cocoa powder
Instructions:
Mix together the milk, coffee, rum and sugar.Soak lady fingers in the coffee mixture.Layer 1/2 of the soaked ladyfingers in the bottom of a 9x13 inch pan.Beat together egg yolks and 2 tablespoons sugar.Add the mascarpone cheese and 1 tablespoon of rum; mix well.Whip egg whites until stiff peaks form; fold into mascarpone cheese mixture.Spread 1/2 of mixture over soaked lady fingers.Cover with second half of soaked lady fingers and cover evenly with remaining mascarpone cheese mixture.Sprinkle with cocoa powder.Refrigerate at least 3 hours.
