Vegan Split Pea Soup II recipe |

Ingredients:
1 tablespoon extra virgin olive oil1 carrot, chopped1 stalk celery, chopped1 small onion, chopped1 teaspoon curry powder1 cup yellow split peas4 cups water1 teaspoon salt
Instructions:
Heat olive oil in a large saucepan.Sautee carrot, onion, celery and curry for about 5 minutes.Add the water, peas and salt.Simmer, stirring occasionally, for 45 to 50 minutes, or until very thick.
