Vegetable Frittata recipe |

Ingredients:
2 tablespoons vegetable oil1 1/2 cups chopped zucchini1 1/2 cups chopped fresh mushrooms3/4 cup chopped onion3/4 cup chopped green bell pepper1 clove garlic, minced1 1/2 cups egg substitute1/4 cup half-and-half cream2 (8 ounce) packages fat-free cream cheese, diced2 cups shredded reduced-fat Cheddar cheese4 slices EARTH GRAINS® Extra Fiber Whole Wheat bread, cubedsalt and pepper to taste
Instructions:
Preheat oven to 350 degrees F (175 degrees C).Lightly grease a 9x13 inch baking dish.Heat oil in a large skillet over medium high heat.Mix in zucchini, mushrooms, onion, green pepper, and garlic, and saute until tender.Remove from heat and let cool slightly.In a large bowl, beat together the egg substitute and cream.Stir in cream cheese, Cheddar cheese, bread cubes, and the sauteed vegetables.Season with salt and pepper.Mix well, and pour into the prepared baking dish.Bake 1 hour in the preheated oven, or until center is set.Serve hot or cold.
