White Mountain Cake recipe

Ingredients:

  • 3/4 cup shortening
  • 1 3/4 cups white sugar
  • 3 cups cake flour
  • 1/2 teaspoon salt
  • 4 teaspoons baking powder
  • 1 cup milk
  • 5 egg whites
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract

    Instructions:

  • Sift and measure flour.
  • Add salt and baking powder, and sift again.
  • In a large bowl, cream shortening.
  • Add sugar gradually, and cream until fluffy.
  • Add sifted ingredients alternately with milk and flavoring.
  • Beat thoroughly after each addition.
  • Beat egg whites until stiff, and fold into mixture.
  • Pour batter into greased 9 inch round pans.
  • Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes.
