Zucchini Casserole I recipe


    8 servings

Ingredients:

  • 8 cups diced zucchini
  • 1 red bell pepper, chopped
  • 1 cup cornflakes cereal
  • 1 cup shredded Cheddar cheese
  • 1/2 cup olive oil
  • 1 teaspoon dried basil
  • 2 eggs, beaten
  • salt and pepper to taste

    Instructions:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Lightly oil a 9x13 inch baking dish.
  • In a large bowl, combine zucchini, bell pepper, cornflakes, cheese, oil, basil, and eggs.
  • Season with salt and pepper to taste.
  • Spread evenly into prepared baking dish.
  • Bake in the preheated oven for 45 minutes, or until top is golden brown.
